Background

Hello! I am Thabo the COOKING CORNER course instructor!

I would like to share with you how The COOKING CORNER was developed and the story behind its creation. As a managing director of AYAE, I and the family members were debating on courses to create.  A cooking course seemed like a dream as my professional work as an Early Years practitioner, drew me to activities for under 5s. However, after careful consideration, we decided to choose a different direction and chose a cookery course as our first course and to continue creating fun activities for children.  The COOKING CORNER course was born and the rest is history.

My initial plan was to choose my favourites or other people’s favourite recipes that I had made over 30 years, in order to share the technique and expertise with others online.  Looking at some of other cooks in the media, I came to realise that the amount of fat and sugar involved in their recipes were way too much for my liking. Consequently, I decided to make cooking with less oil/fat, sugar and salt as my priority.  Over time the concept grew as I added more recipes to my list. The Cooking corner expanded and became rich with world cuisine such as Italian, Indian, Chinese, European, South Sudanese and plant based recipes with many more in the course.

The cooking techniques that you will learn

These are the techniques that you will learn in The Cooking Corner Course

  • Sautéing is frying food with little oil in a pan with dry heat until the food is slightly brown to enhance the flavour.

  • Baking and roasting involve dry heat cooking in the oven. Baking cooking examples are; bread, cakes and some other food while roasting cooking is done in higher temperature from 400 F or above.

  • Grilling is another dry heat cooking method involves direct heat from above in an oven or below in a barbeque. In a griddle or an electric grill, the heat comes from below and above which is applied to the surface of food.

  • Simmering occurs after reaching the boiling point; the heat is turned down to keep the liquid just below the boiling point when cooking with vegetables, stews and soups.

  • A stew cooking is combined solid such as vegetables, meat with liquid to form thick gravy using simmering technique or slow cooking. Stews can also be cooked and produced using an oven and its known as braising.

  • Steaming is a moist heat cooking method using a steam. This is often done with a food steamer or any saucepan using sieve or colander with a cover to cook food with steam. This method is considered healthier especially for cooking vegetables.

  • Barbequing involved cooking with live fire using wood or charcoal likely outdoor. In this course, I will be using this method to cook meat and vegetables. The result is, a smoky flavour from the direct heat applied to the food surface.

  • Pressure cooking is the process of cooking food under high pressure steam using water or other similar liquids above 100 C. The food is cooked in a sealed vessel called a pressure cooker. Pressure cooking reduces the cooking times of certain foods such as legumes.

  • Marinating is the process of adding seasoned sauce or liquid to foods in order to add flavour by immersing them in the marinade before cooking. The longer the food stays immersed in the marinade the better its taste and texture. These are some of the ingredients that I used to marinate some of the recipes in the Cooking Corner; salt, spices, lemon, vinegar, yoghurt, tomato puree, soy sauce and garlic.

  • Bread making , you will learn when the dough has proven and how to knead the dough by hand. Proofing/proving occurs when the yeast ferments the dough resulting in gases or air inside that makes the dough rise in size. On the other hand kneading involves stretching and twisting the dough after mixing the ingredients to form gluten which takes approximately 10 minutes by hand. Nowadays, there are bread making machines that do the job in less time.

  • Chopping an onion or vegetables when cooking, chopping, peeling, and mincing the vegetables are essential part of food preparation. In the video, you will observe and learn some of the techniques that I used.

The Cooking Corner course consists of 12 modules, each module composed of at least two lectures with recipes and videos.  In total there are 47 downloadable recipes with simple instructions including 45 videos with life time access after purchasing. These videos will show you simple step by step instructions needed in a recipe from the beginning to the end result. The techniques that you will learn are; simmering, sauteing, braising, roasting, baking, making sauces and some knife skills as mentioned in the above..

In the course, there are different varieties of recipes, starting from breakfast, sauces, rice and pasta recipes, plants based, South Sudanese and much more to mention the few.

By the time you are done with the course you will be able to master recipe such as lasagna, cabbage rolls, making bread and much more, with a unique opportunity to experience recipes from Sudan/ South Sudan cuisine.
